Raštan

Rastan is an authentic Montenegrin strong meal made of local slightly bitter, sturdy dark-green vegetable from the family of cabbages. It is cooked with white potato and with a lot of spices, and is delicious when cooked into a stew with smoked pork ribs or ham hocks.

Rastan is grown in the region for over 2,000 years!

Southern part of Montenegro is well known by raštan (sort of cabbage) with smoked meat.

What raštan makes tastier is morač (kind of spice with characteristic, exotic and strong aroma.

Preparation:

Depending in what region of Montenegro it is prepared, rastan can be made with flouered sausages, smoked ribs or dried dry pork joint or dry bacon.

For the preparation of this meal, you will need:

  • 500 gr rastan
  • 500 gr Njeguska sausage (traditional Montenegrin meat), smoked pork ribs or/and other meat
  • 3 middle-sized potatoes
  • 2 onions
  • 2 middle-sized carrots
  • 4-5 garlic cloves

In case you would like browned roux:

  • 1 table spoon of fat
  • 1 table spoon of flour
  • 1 tea spoon of red pepper

Preparation:

Wash raštan well and remove the hard parts. Then tear in pieces by hands and put in boiling and previously salted water to cook.

At the same time cook dry pork joint, a piece of dry bacon and a piece of pork head. When all this is cooked, put all together into a express pot to cook.

When half boiled, filtrate rastan leaves, cool them off and chop them to pieces. Take care not to overcook the raštan and not to add too much salt as the meat itself is quite salted. Add everything into to express pot with meat. For additional flavour, add the water where rastan was previously cooked. Chop the onion, carrot and garlic into the pot. Close the pot and leave it to finish cooking. After the express cooking is done, lower the pressure in the pot. After approxiamtely hour cooking is finished and you should wait for the meal to cool off and serve.
